This week's menu plan has come from some really great blogs. I can't wait to try them out as they are all very simple, comforting meals.
Monday: Slow Cooker Pepper Steak served over brown rice.
Tuesday: Braised Greens and Lentils Will try to find a nice ham hock from the local butcher to put in this!
Wednesday: Three Cheese Baked "Spaghetti" Using spaghetti squash instead of pasta! Will also make my own sauce using organic canned tomatoes.
Thursday: Our 15th anniversary....Doug better be wining and dinning me!
Friday: Spinach & Rice Casserole
Saturday: Garlic Noodles
Sunday: Pinto Beans and Cornbread

Thanks for the recipes; I am adding a few of them to my files. I was thinking of lentils for this week and since I just received a ham hock (all natural and fresh!) from the farm, this will be perfect. I'm not a collard person (even though I was reared in AL) but we like Kale, so I'll substitute.
Hi Joann - For the greens and lentils, the hamhock's good, but a good ham steak, or even some smoked pork shoulder would work just as well. Hope you like it!

I saw some spaghetti squash on a food program a long time ago but haven't ever tried it irl. Have you had it before? What does it taste like?
Spag. squash is a very good alternative to pasta! It has almost the same texture, but with a little more crunch. It soaks up sauces nicely. To cook it, just split it down the middle and place in a baking pan with 2" of water. Place cut side down and bake at 350 for 40 minutes or until fork tender. Then shred the insides with a fork for piles of "spaghetti"!
