Eat more sprouts!


I really enjoy bean sprouts but have a hard time convincing my family that they should love them, too. Bean sprouts are one of the most nutritionally dense foods there are. They are rich in protein as well as vitamin A, B complex, vitamins C and E, and various minerals and enzymes. Studies have shown they protect against cancer, fatigue and can boost the immune system.
If you buy them in the store, you'll pay an arm and a leg for a small box. Plus, who knows how long it's been sitting there (and losing all that great nutritional value!) You can make your own for pennies and eat them at their peak!
Just about any seed, bean, or nut can be sprouted, and you don't need a degree in rocket science to do it! Just take your dried beans (mung beans in this case) and soak in water overnight. Give them a good rinse the next day and wrap your bowl or strainer in a heavy kitchen towel and place out of the way. Rinse the beans twice a day with warm water, and in about three days you'll have edible sprouts! Store them in the fridge to preserve them and stop the sprouting process.

Sprouts are wonderful in salads, on sandwiches, mixed into casseroles and soups.
