Trying to utilize our garden as much as possible this week! I'm not sure why I'm just now making a meal plan from our garden harvest, but it's going to be delicious, fresh, and cheap to feed our family this week! We'll make a run to Whole Foods for the three meals that require meat, and everything else is naturally organic from our garden.
Monday: Collard greens and grilled kielbasa.
Tuesday: Cauliflower and broccoli bake
Wednesday: Southern fried cabbage and cornbread
Thursday: Taco salad with lettuce greens from the garden. (Will make lentil tacos to sub for meat in this dish and use organic blue corn chips)
Friday: Fish in parchment packs with swiss chard.
Saturday: Pork roast with roasted brussell sprouts.
Sunday: Spinach fritatta with side salad.

ReplyDeleteIt just depends on what I have on hand! Swiss chard leaves, minced garlic, and lemon slices will go into these packets. Bake at 350 for 25 minutes. I've also used baby bok choi, scallions, mushrooms, fresh ginger, french cut green beans, or shredded carrots. It just depends on your taste and what kind of fish you are serving!
