Meatless Fridays

On this new low carb lifestyle I'm attempting, I'm trying to find good substitutions for pasta and rice. I think I've found it! We had been running errands all day and I was exhausted come dinner time. I had some homemade marinara sauce in the freezer but noodles are a no-no for me. Instead, I took some zucchini and ran it across my mandolin to form little noodles or zucchini sticks. The heat from the sauce made them nice and tender and the meal was really delicious...John Paul even ate it!
So this week's Meatless Friday meal is:

Zucchini "Pasta"

Run several young, tender zucchini over a mandolin to shred. Serve raw with your favorite pasta sauce over the top, or steam slightly to soften for a raw sauce like pesto.
