Meatless Fridays

Who doesn't love pasta and garlic? Make a batch of crusty artisan bread to go with this and you'll be in carb overload Heaven!
This week's meatless Friday meal is so simple to make and DE.LI.CIOUS:

Garlic Noodles


7 ounces dry Chinese noodles or spaghetti
1 large shallot, minced or you could just garnish with green onion
2 tablespoons butter
4 cloves of finely minced garlic
2 tablespoons light brown sugar
1 teaspoon soy sauce
1 tablespoon oyster sauce

Boil a large pot of water and cook the noodles according to package instructions.
Drain the noodles and wipe the pot clean. Place the noodles back in the pot and set aside.
In fry pan bring butter to a sizzle and add shallots and garlic. Stir fry for 12 minutes being careful not to burn the garlic.
In a small mixing bowl add the brown sugar, soy sauce, and oyster sauce and stir well to mix. Add the noodles and toss well evenly distribute the sauce on the noodles.

Oh, and pick up a tin of Altoids at the store!

I make something very similar.
Although mine is:

soy sauce
rice vinegar
sesame oil
a splash of canola oil
red pepper flakes
garlic
ginger
brown sugar
a little cornstarch to thicken it so it sticks to noodles
I blend it with my hand blender and heat it up.

This also makes a GREAT marinade for chicken and beef.
