I changed my menu plan for tonight and made a winter vegetable soup. I have a feeling it's going to be a staple around the house this season! It's simmering in the crock all day and I'll serve it with a pan of sweet honey cornbread.
Mmmm.....can you feel the love?
Winter vegetable soup:
4-5 red potatoes cut into bite size pieces
one onion rough chopped
4-5 carrots chopped
1 bunch of swiss chard
2-3 cloves of garlic minced
2 boxes of organic chicken stock
salt, pepper, rosemary, thyme, and oregano to taste.
Put all the ingredients into the crock and cook on low for 8 hours.
UPDATE: There is NO love for swiss chard around here!
It tastes like stinky feet and has an odd smell that makes me slightly nauseous.
I'm pulling out of the garden immediately!
